Cheddar Broccoli Risotto and Chicken January 27, 2010

Can you say YUM?!?!? I’m not going to give calorie info for this meal because it’s dependent on what you use. For instance, if you use 1% 2% whole, skim, or soy milk. Also, if you use olive oil or butter and blah blah blah. Also, it depends on how much chicken you eat. I don’t even know the calories for chicken, but I know a serving size is 3 oz and thats about 1/2 a large breast. Also, there are two ways to make this. You can do it college student syle, or family meal style. I’ll give you college student style, because well that’s what I am!

What you need:

1 box of Lundberg Eco Farmed Risotto (cheddar broccoli flavor)

1 chicken breast

Frozen broccoli

your favorite spices (I used itallian seasoning, crushed garlic, and grated parmesan cheese)

Follow the directions on the box to cook the risotto. I do it on the stove which will make sense in a bit. The Risotto takes 20 minutes to cook so while it’s cooking you can prepare the chicken. Cut the chicken into bite sized pieces. rub the spices on both sides of the chicken and put into a skillet. Cook chicken on medium heat until done, it shouldn’t take more than about 10 minutes since it’s cut in small pieces.

For the broccoli cook however much you like. I usually do about a cup to a cup and a half. So, I take the frozen broccoli and place it in a bowl and microwave for 2 minutes only. 5 minutes before the risotto is done stir the broccoli into the pot and let cook the rest of the way with the risotto.

To serve get a bowl and dish out however much broccoli and risotto you would like and then place however much chicken you would like on top. Mix it all together and enjoy!!!! It’s so yummy and gluten free and good for you too!

For family style, cook up some whole breasts, you can even grill them. Make fresh broccoli and serve chicken breast, broccoli, and risotto on a plate.

 

Weak Moment January 21, 2010

I just had a weak moment and gave in and ate possibly one of the worst foods I could ever eat…McDonalds. But, with all the emotional stress that has recently developed I needed something comforting. McDonalds isn’t comforting, but fried food is, and I got their chicken select strips. I know I will pay for it later, I know I won’t feel good in a bit, and I know it’s not going to help solve my problems…but I ate it anyways! Usually I don’t eat when I’m like this, but I have a full day of classes so I know I needed to eat. Bleh, I’m not very smart. Oh well.

 

Yogi Tea and Umcka January 21, 2010

Yup, I’m sick again. It started yesterday I had a sore throat, cough and fever. I’ve started trying that UMCKA stuff and I think it works. I took it yesterday and today so far I haven’t been coughing or had a fever, but my throat is still soar. I’ve fallen in love with Yogi brand teas. They are really yummy and the herbs are soothing, it’s almost as good as brewing loose leaf tea. They have a tea for everything from throat comfort, breath deep, echinacea immune support, to detox and help you get regular.

So thats my current recommendation for head colds. Yogi tea and umcka.

 

Turkey Quesadilla January 19, 2010

mmmm this was a very yummy breakfast. Not entirely gluten free, but at least tortillas are unlevaned. Anyways this is what I had:

  • 1 Santa Fe Tortilla Company Carb Chopper flour tortilla-70 calories
  • 1 thick slice of Bores Head turkey breast-50 calories
  • 1/4 cup shredded Kraft Naturals Fat Free Shredded Cheddar-45 calories
  • 1 green chili pod chopped

So, take your tortilla and lay it flat. Then take the turkey and rip it in shreds and pile on the tortilla. Add the chopped chili and then the cheese. Put in toaster oven and I set it to the dark setting for toast. You don’t want it burned, but you want the tortilla crispy. When done, fold tortilla in half and enjoy! You can also dip it in salsa for extra yummy flavor. Not bad for 165 calories. I also paired it with a hard boiled egg for some extra protein…I don’t want to pass out while doing my homework.

YAY! I finally got my blog started, mainly because I wanted to tell people about the delicious breakfast I just had (that will be in a different post). So, what is the biggest nut? That’s me! A Facebook friend called me a big nut over the holidays and I thought I would stick with it. This blog is where I will share my life and thoughts. It is mainly going to be geared towards fibromyalgia and my dealings with it. Like right now my goal is to get healthy and back in shape since when I got diagnosed with FMS I became a fat slob! Don’t be surprised though if I stray from fibro and health to other random things, but thats me! Which is weird because I’m a libra and things should be nice and orderly.

Oh, btw don’t you love the title of this post? “Hello World!” Yeah wordpress thought I should use that as the title for my first post so I just left it that way.
